What is Machboos?
Machboos (also spelled Majboos or Kabsa in some regions) is the quintessential Gulf rice dish. Fragrant basmati rice cooked with spiced chicken or lamb, dried lime (loomi), and a blend of warm spices. It's served at family gatherings, Friday lunches, and celebrations across the GCC.
Ingredients (serves 6)
For the meat:
1 whole chicken (cut into pieces) or 1 kg lamb, 2 large onions (finely chopped), 3 tbsp ghee or oil, 3 cloves garlic (minced), 1-inch ginger (grated), 2 tomatoes (chopped).
Spices:
1 tbsp baharat (Arabic spice blend), 1 tsp turmeric, 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp ground cinnamon, 1/4 tsp ground cardamom, 1 dried black lime (loomi) — pierced with a fork, 2 bay leaves, salt to taste.
For the rice:
3 cups basmati rice (soaked 30 min, drained), 4-5 cups chicken broth (from cooking the meat), 1/4 tsp saffron (soaked in 2 tbsp warm water), 1 tbsp ghee.
Garnish:
1/4 cup fried almonds, 1/4 cup raisins (fried in ghee), fresh parsley (chopped).
Step-by-Step Instructions
Step 1: Cook the meat
In a large pot, heat ghee over medium heat. Add chopped onions and fry until golden brown. Add garlic and ginger, cook 1 minute. Add the chicken or lamb pieces and brown on all sides.
Step 2: Add spices and tomatoes
Add all the spices, the pierced dried lime (loomi), bay leaves, and chopped tomatoes. Stir well and cook for 5 minutes until tomatoes soften. Add 5 cups of water, bring to a boil, then reduce heat and simmer for 30-40 minutes (chicken) or 1 hour (lamb) until meat is tender.
Step 3: Remove meat, prepare rice
Remove the meat pieces and set aside. Measure the broth — you need about 4 cups. Add more water if needed. Bring broth to a boil, add the soaked drained rice. Cook on high for 5 minutes, then reduce to lowest heat, cover tightly, and cook for 15-20 minutes until rice is done.
Step 4: Layer and steam
Place the cooked meat pieces on top of the rice. Drizzle saffron water and ghee over the top. Cover tightly and let steam (dam) on very low heat for 10-15 minutes.
Step 5: Serve
Fluff the rice gently. Transfer to a large serving platter, placing the meat on top. Garnish with fried almonds, raisins, and parsley. Serve with fresh salad and yogurt.
Cooking Tips for Domestic Workers
1. Soak basmati rice for at least 30 minutes — this makes the grains longer and fluffier.
2. The dried lime (loomi) is essential for authentic flavor. Pierce it with a fork before adding to release its smoky aroma.
3. Never stir the rice once you've covered it — this breaks the grains and makes it mushy.
4. Each Gulf country has slight variations: Emiratis use more fish, Saudis use more lamb, Kuwaitis add more spices. Ask your employer about their family's preferred style.
5. Leftover machboos can be reheated with a little broth — it tastes even better the next day.
